A treasure of the New World, prickly pears are now found in the arid parts of the world, but are well known in the desert southwest and Mexico. Made from the fruit of the paddle cactus (also known as the nopales). A bit tangy and reminiscent of melon, our prickly pear cactus is a great wake up call in the morning with it's bright fuchsia hue. For a dash of sweetness, a tinge of tang, put a dollop in the center of muffin batter in muffin tins before baking, or top a white chocolate cheesecake. Drop a little into lemonade by the glass for a fresh take on pink lemonade!
